No really—I stopped eating lunch meat well over 15 years ago, and a good veggie sandwich has always been so much more satisfying and honestly just more enjoyable to eat. There are so many ways to layer the veggies and spreads, the flavors and textures, so I have been wanting to start sharing more of my veggie sandwich creations on the blog, starting with this Green Goddess Veggie Sandwich with Herby Mayo. Also, Spring has definitely become my favorite time for creating content, and this one really reflects that—an herby mayo with basil and tarragon (my new favorite herb to cook with) layered with some of the best green veggies of the season.

Ingredients
  

  • 8 slices whole grain or seedy bread, lightly toasted
  • Butter lettuce
  • 1-2 large ripe avocados, sliced
  • ½ small purple onion, thinly sliced
  • ½ English cucumber, thinly sliced
  • Jarred sliced pepperoncini
  • 1 green or yellow heirloom tomato, thinly sliced
  • Sprouts

Herby Green Goddess Mayo

  • ½ cup plant-based mayonnaise
  • 3 tbsp fresh basil, chopped
  • 1 tbsp fresh tarragon, chopped
  • 1 tsp Dijon mustard
  • Squeeze of fresh lemon juice
  • Salt and pepper, to taste

Instructions
 

  • Make the Herby Green Goddess Mayo: In a bowl, mix ½ cup plant-based mayonnaise, 3 tbsp chopped fresh basil, 1 tbsp chopped fresh tarragon, 1 tsp Dijon mustard, a squeeze of fresh lemon juice, and salt and pepper to taste until smooth and well combined.
  • Prep the Veggies: Slice your avocado, purple onion, English cucumber, and heirloom tomato. Have your butter lettuce, pepperoncini, and sprouts ready to go.
  • Toast the Bread: Lightly toast your slices of whole grain or seedy bread until golden and crisp.
  • Assemble the Sandwich: Spread a generous layer of the herby mayo on both sides of each slice of toasted bread—about 2 tbsp per sandwich.
    Layer starting with butter lettuce, then add sliced avocado and gently mash it with a knife or fork. Add purple onion, cucumber, pepperoncini, heirloom tomato, and finish with sprouts.
    Top with the second slice of bread and press gently.
  • Slice & Serve: Slice in half and serve immediately.
