Greek Tofu Gyro with Oregano Fries: A Plant-Based Wrap That Hits Every Time
This Greek Tofu Gyro with Oregano Fries is based off a halloumi gyro I had in Santorini, Greece. My family was heading out for another long sit-down dinner, and my partner and I wanted a break, so we found this small spot selling gyros for around €5. At the time, I ordered the halloumi gyro, and it came almost exactly how I recreated this one—with pesto, onion, tomato, and fries tucked inside. Since the blog is now plant-based, I wanted to recreate that halloumi gyro recipe I used to have on the blog, and after a few tries, I got it. This recipe hits, and I’m really proud of it. It’s loaded with flavor and will not disappoint. I also picked up a ton of Greek oregano while in Greece, which is why I use it on the fries and in the final drizzle—if you can get your hands on some, I highly recommend it.
Why You’ll Love This Recipe

Travel-inspired. Based on a gyro I had in Santorini and recreated for the blog.
Great texture. Warm, slightly toasted pita, crispy fries, juicy tomato, and golden tofu all in one bite.
Weeknight friendly. Easy enough to make any night of the week.
Something different. A fun switch-up from the usual sandwich or wrap routine.

Ingredient Highlight: Greek Oregano
Greek oregano really makes this recipe pop. It has a stronger, more lemony, earthy flavor than standard oregano, with a warm peppery edge that works perfectly with lemon, olive oil, and potatoes. It’s commonly used throughout Greek cooking, especially in roasted vegetables, grilled dishes, and simple dressings. Here it pulls double duty—on the fries and again in the final drizzle. If you can find it, it’s worth keeping around.

Madly Delicious Must-Know Tips & Questions
- Slice the fries thin. Thin matchstick fries cook faster and crisp up better in the oven.
- Don’t skip the marinade. Even 30 minutes adds a lot of flavor to the tofu.
- Warm the bread. A quick toast makes the pita or naan much better.
Can I use store-bought fries?
Yes. Homemade is great, but frozen fries can absolutely save time.
What bread works best?
Pita is classic, but naan or any soft flatbread works really well too.
Can I make this ahead?
Parts of the recipe. You can marinate the tofu and prep the ingredients ahead, but I recommend cooking the fries and tofu fresh for the best texture.

Let’s Dish About Gyros: Did You Know?
Gyros are one of the most popular street foods in Greece and are typically served wrapped in pita with fillings like tomato, onion, and fries tucked right inside. Adding fries into the gyro is especially common in Greece and gives it that extra satisfying bite. The word “gyro” comes from the Greek word meaning “turn,” referring to the rotating spit used for traditional gyro meat. While classic versions use meat, modern plant-based spins like this keep all the flavor and fun of the original concept.

Greek Tofu Gyro with Oregano Fries
Equipment
- Sheet pan
- Medium skillet
Ingredients
- 2 pita, naan or flatbread of choice
- 8 ounces extra-firm tofu, pressed if needed and cut into 6 equal slices
- 2 tbsp pesto of choice, homemade or store-bought
- 1 Roma tomato, halved and cut into half moons
- 1 thin round onion, cut into half-moons (yellow or white)
- 1 medium golden potato, cut into thin fries (see Notes)
- 1½ tbsp olive oil
- ½ tsp oregano (Greek oregano if you have it)
- Salt and black pepper, to taste
Tofu Marinade
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- 2 tbsp caper brine (or juice from a jar of pepperoncini)
- 1 garlic clove, minced or grated
- ½ tsp oregano (Greek if you have it)
- ½ tsp salt
Instructions
- Prep the Oven & Pan: Preheat oven to 425°F (218°C) and line a sheet pan with parchment paper.
- Make the Tofu Marinade: In a bowl, whisk together 2 tbsp olive oil, 2 tbsp fresh lemon juice, 2 tbsp caper brine, 1 garlic clove, ½ tsp oregano, and ½ tsp salt.
- Marinate the Tofu: Add the 8 oz sliced tofu to the marinade and gently coat all sides. Let sit for 30 minutes, or up to 3 hours, tossing halfway through. Use this time to prep the fries.
- Season the Fries: In a small bowl, mix 1½ tbsp olive oil and ½ tsp oregano. Add the thinly sliced golden potato fries to the sheet pan and toss with half of the oregano oil mixture, plus salt and black pepper, until evenly coated. Spread into a single layer and reserve the remaining oregano oil for drizzling over the finished gyros.
- Bake the Fries: Bake for about 25 minutes, stirring halfway through, until golden and crisp.
- Cook the Tofu: During the last 8–10 minutes of the fries cooking, heat a skillet over medium heat. Add the marinated tofu and cook for 3–4 minutes until golden. Flip, then pour the remaining marinade over the tofu and continue cooking until the second side is golden and the marinade has cooked into the tofu.
- Warm the Bread: Warm the pita, naan, or flatbread on a flattop or pop into the oven just until lightly toasted and warm.
- Assemble the Gyros: Spread pesto onto one half of each pita or flatbread. Add 3 pieces of tofu to each wrap, then layer with onion, tomato, and hot oregano fries. Fold and drizzle with the reserved oregano oil if desired.
- Serve: Serve immediately and enjoy!

Yum! I can’t believe how simple and delicious this was.
