Ingredients
  

  • 8 ounces (~ 14) white, button or baby cremini mushrooms, sliced in half (stems kept on)
  • 2 tbsp salted vegan butter
  • 2 cloves garlic, minced
  • 1 tbsp olive oil (optional, if needed while sautéing)
  • ¼ cup red wine (like Cabernet Sauvignon, Red Blend, or Chianti; or whatever you have open)
  • Salt, taste and adjust
  • Pepper, to taste
  • Fresh parsley to garnish

Instructions
 

  • Prep the Mushrooms: Wipe the 8 ounces mushrooms clean with a damp cloth and slice them in half, keeping the stems intact.
  • Melt Butter and Add Garlic: In a large skillet over medium heat, melt the 2 tbsp butter. Add the 2 cloves minced garlic and cook for 30 seconds until fragrant.
  • Sauté the Mushrooms: Add the mushrooms to the skillet and cook for 3-4 minutes, stirring occasionally. If the pan feels dry, add 1 tbsp olive oil as needed.
  • Add Red Wine and Season: Pour in the ¼ cup red wine, stirring to coat the mushrooms evenly. Add salt and pepper to taste and adjust as needed.
  • Simmer and Serve: Let the mushrooms simmer for 4-5 minutes, stirring occasionally, until the wine has reduced and a little sauce remains, creating a glossy coating. Transfer to a serving dish, sprinkle with fresh parsley and enjoy as a side dish!

Notes

Wine Choice
A Cabernet Sauvignon, red blend, or Chianti works beautifully, but feel free to use whatever red wine you have open—it will still add great depth and flavor.
Mushroom Variety
White or button mushrooms work beautifully, but baby bella or cremini mushrooms can add a slightly earthier flavor.
Storage
Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat gently on the stovetop.
