Red Wine and Garlic Mushrooms: A Quick and Elegant Side Dish

This recipe actually comes from my partner! He makes this every now and then, and I thought it was such an interesting idea to pair red wine with mushrooms. It’s so quick and easy to throw together that I knew I had to share it. With simple, minimal ingredients, this dish is versatile and works beautifully as a side with your protein of choice—like tofu—or served alongside grains, pasta, or even on its own if that’s your thing!

Why You’ll Love This Recipe

Quick and Easy: Ready in just 15 minutes, it’s perfect for busy weeknights or last-minute meals.

Rich and Flavorful: The combination of garlic, butter, and red wine creates a luxurious flavor profile.

Minimal Ingredients: Requires just a handful of simple ingredients you likely already have on hand.

Versatile Side Dish: Pairs beautifully with grains, pasta, or even enjoyed as a stand-alone dish.

Ingredient Highlight: Mushrooms

Mushrooms are the star of this dish, bringing their earthy, umami-rich flavor to the table. White or button mushrooms are mild and tender, while baby bella or cremini mushrooms add a slightly deeper, meatier taste. They’re also packed with nutrients like B vitamins and antioxidants, making them as nutritious as they are delicious.

Madly Delicious Must-Know Tips and Questions

  • Wine Selection: Use a wine you’d enjoy drinking—Cabernet Sauvignon, red blends, or Chianti all work wonderfully.
  • Cooking Tip: Don’t overcrowd the skillet; mushrooms need space to brown and develop flavor instead of steaming.
  • Vegan Option: Simply swap the butter for vegan butter to make this dish plant-based.

Can I use a different type of mushroom?
Yes! Cremini, baby bella, or even wild mushrooms will work beautifully in this recipe.

What if I don’t cook with wine?
You can substitute the wine with vegetable broth or balsamic vinegar for a flavorful alternative.

How long will leftovers keep?
Store leftovers in an airtight container in the fridge for up to 2 days. Reheat gently on the stovetop.

Let’s Dish: Did You Know?

Mushrooms have been a beloved ingredient for centuries, dating back to ancient Roman and Chinese cuisines. Their ability to soak up bold flavors like garlic and wine makes them incredibly versatile in cooking. Pairing them with a simple red wine reduction elevates their natural umami into something truly special.

Ingredients

  • 8 ounces (~ 14) white, button or baby cremini mushrooms, sliced in half (stems kept on)
  • 2 tbsp salted vegan butter
  • 2 cloves garlic, minced
  • 1 tbsp olive oil (optional, if needed while sautéing)
  • ¼ cup red wine (like Cabernet Sauvignon, Red Blend, or Chianti; or whatever you have open)
  • Salt, taste and adjust
  • Pepper, to taste
  • Fresh parsley to garnish

Instructions

  • Prep the Mushrooms: Wipe the 8 ounces mushrooms clean with a damp cloth and slice them in half, keeping the stems intact.
  • Melt Butter and Add Garlic: In a large skillet over medium heat, melt the 2 tbsp butter. Add the 2 cloves minced garlic and cook for 30 seconds until fragrant.
  • Sauté the Mushrooms: Add the mushrooms to the skillet and cook for 3-4 minutes, stirring occasionally. If the pan feels dry, add 1 tbsp olive oil as needed.
  • Add Red Wine and Season: Pour in the ¼ cup red wine, stirring to coat the mushrooms evenly. Add salt and pepper to taste and adjust as needed.
  • Simmer and Serve: Let the mushrooms simmer for 4-5 minutes, stirring occasionally, until the wine has reduced and a little sauce remains, creating a glossy coating. Transfer to a serving dish, sprinkle with fresh parsley and enjoy as a side dish!

Notes

Wine Choice
A Cabernet Sauvignon, red blend, or Chianti works beautifully, but feel free to use whatever red wine you have open—it will still add great depth and flavor.
Mushroom Variety
White or button mushrooms work beautifully, but baby bella or cremini mushrooms can add a slightly earthier flavor.
Storage
Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat gently on the stovetop.
