This Meatless Pasta Sauce is hearty, flavorful, and perfect for a comforting weeknight meal! Made with Beyond Beef, tomatoes, and classic Italian seasonings, it’s a plant-based twist on a nostalgic favorite. Serve over your favorite pasta for a completely comforting dinner.

1medium to large yellow or sweet onion, diced
3garlic clove, minced
2tbspolive oil
1(28-ounce)can crushed or diced tomatoes
1(15-ounce)can tomato sauce
1(6-ounce)can tomato paste
1cupred wine (optional)
1tspgranulated sugar (add another teaspoon if needed)
1tspdried oregano
1tspdried basil
½tspdried rosemary
½tspdried thyme
1bay leaf
1½tspsalt
1tspblack pepper

Instructions
Sauté the aromatics: Heat 2 tbsp olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds, until fragrant.
Brown the Beyond Beef: Add the Beyond Beef to the pot, breaking it up with a wooden spoon. Season with 1½ tsp salt and 1 tsp black pepper, then cook until heated through and lightly browned, about 5–7 minutes.
Add the tomatoes and tomato paste: Stir in the crushed or diced tomatoes, tomato sauce, and tomato paste until well combined.
Add the red wine (optional): Pour in 1 cup red wine and stir.
Season the sauce: Add 1 tsp sugar, 1 tsp oregano, 1 tsp basil, ½ tsp rosemary, ½ tsp thyme and 1 bay leaf. Stir to combine.
Simmer the sauce: Reduce heat to low, cover, and let the sauce simmer for 30–40 minutes, stirring occasionally. Taste and adjust seasoning, adding more sugar if the tomatoes are too acidic.
Cook the pasta: While the sauce simmers, cook your favorite pasta according to the package instructions.
Finish: Remove the bay leaf and toss the sauce with the cooked pasta.
Serve: Top with plant-based Parmesan, fresh basil, or chili flakes.
