Classic Meatless Meat Sauce Pasta

Ingredients
  

  • 1 (16-ounce) packet spaghetti (regular or gluten-free)
  • 1 lb (16-ounce) Beyond Beef
  • 1 medium to large yellow or sweet onion, diced
  • 3 garlic clove, minced
  • 2 tbsp olive oil
  • 1 (28-ounce) can crushed or diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 (6-ounce) can tomato paste
  • 1 cup red wine (optional)
  • 1 tsp granulated sugar (add another teaspoon if needed)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried rosemary
  • ½ tsp dried thyme
  • 1 bay leaf
  • tsp salt
  • 1 tsp black pepper

Optional Garnish

  • Grated plant-based Parmesan cheese
  • Fresh basil
  • Chili flakes

Instructions
 

  • Sauté the aromatics: Heat 2 tbsp olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds, until fragrant.
  • Brown the Beyond Beef: Add the Beyond Beef to the pot, breaking it up with a wooden spoon. Season with 1½ tsp salt and 1 tsp black pepper, then cook until heated through and lightly browned, about 5–7 minutes.
  • Add the tomatoes and tomato paste: Stir in the crushed or diced tomatoes, tomato sauce, and tomato paste until well combined.
  • Add the red wine (optional): Pour in 1 cup red wine and stir.
  • Season the sauce: Add 1 tsp sugar, 1 tsp oregano, 1 tsp basil, ½ tsp rosemary, ½ tsp thyme and 1 bay leaf. Stir to combine.
  • Simmer the sauce: Reduce heat to low, cover, and let the sauce simmer for 30–40 minutes, stirring occasionally. Taste and adjust seasoning, adding more sugar if the tomatoes are too acidic.
  • Cook the pasta: While the sauce simmers, cook your favorite pasta according to the package instructions.
  • Finish: Remove the bay leaf and toss the sauce with the cooked pasta.
  • Serve: Top with plant-based Parmesan, fresh basil, or chili flakes.

Notes

Adjusting Salt Levels
If your canned tomatoes contain added salt, start with 1 tsp salt and adjust to taste.

Storage for Pasta
Store leftover pasta and sauce together in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave.
Freezing the Sauce
Let the sauce cool completely, then freeze in an airtight container or freezer bag for up to 3 months. Thaw in the fridge overnight before reheating.
