- 1 (16-ounce) packet spaghetti (regular or gluten-free)
- 1 lb (16-ounce) Beyond Beef
- 1 medium to large yellow or sweet onion, diced
- 3 garlic clove, minced
- 2 tbsp olive oil
- 1 (28-ounce) can crushed or diced tomatoes
- 1 (15-ounce) can tomato sauce
- 1 (6-ounce) can tomato paste
- 1 cup red wine (optional)
- 1 tsp granulated sugar (add another teaspoon if needed)
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp dried rosemary
- ½ tsp dried thyme
- 1 bay leaf
- 1½ tsp salt
- 1 tsp black pepper
Optional Garnish
- Grated plant-based Parmesan cheese
- Fresh basil
- Chili flakes
Instructions
- Sauté the aromatics: Heat 2 tbsp olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds, until fragrant.
- Brown the Beyond Beef: Add the Beyond Beef to the pot, breaking it up with a wooden spoon. Season with 1½ tsp salt and 1 tsp black pepper, then cook until heated through and lightly browned, about 5–7 minutes.
- Add the tomatoes and tomato paste: Stir in the crushed or diced tomatoes, tomato sauce, and tomato paste until well combined.
- Add the red wine (optional): Pour in 1 cup red wine and stir.
- Season the sauce: Add 1 tsp sugar, 1 tsp oregano, 1 tsp basil, ½ tsp rosemary, ½ tsp thyme and 1 bay leaf. Stir to combine.
- Simmer the sauce: Reduce heat to low, cover, and let the sauce simmer for 30–40 minutes, stirring occasionally. Taste and adjust seasoning, adding more sugar if the tomatoes are too acidic.
- Cook the pasta: While the sauce simmers, cook your favorite pasta according to the package instructions.
- Finish: Remove the bay leaf and toss the sauce with the cooked pasta.
- Serve: Top with plant-based Parmesan, fresh basil, or chili flakes.
