Mint Dressing:

  • 5-6 mint leaves, chopped
  • 1 tbsp olive oil (you can also use avocado oil or grapeseed oil)
  • 2 tsp of lime juice (~ ½ a small lime)
  • 1 tsp honey (or agave)
  • Pinch salt and pepper
  • Pinch chili flakes, optional

Toast:

  • 1 slice sourdough or other crusty bread*
  • 1 small avocado (or half a medium/large avocado), sliced or mashed
  • 1 large strawberry or two small strawberries, tops removed and sliced
  • 1 tbsp vegan goat or feta cheese

Instructions
 

  • Make the Mint Dressing: In a small bowl, whisk together 5–6 chopped mint leaves, 1 tbsp olive oil, 2 tsp lime juice, 1 tsp honey or agave, a pinch of salt, and a pinch of chili flakes (if using). Taste and adjust to your liking, then set aside.
  • Toast the Bread:Toast 1 slice of sourdough (or any crusty bread) until golden and crisp.
  • Assemble the Toast: Spread or mash 1 small avocado (or ½ a medium avocado) over the warm toast. Layer on 1 large sliced strawberry (or 2 small). Sprinkle with 1 tbsp vegan goat or feta cheese.
  • Finish: Drizzle the mint dressing over the top. Add extra chili flakes if you love a little heat, and enjoy right away.
