Warm up with this cozy Rosemary Honey Oat Milk Latte—a creamy, café-style drink with just the right hint of herbal elegance.

Rosemary Honey Oat Milk Latte: An Herbaceous Delight
This was actually the very first recipe I ever shared on the blog. Back when I lived in Denver, there was a coffee shop with a rosemary latte on the menu. I always loved the idea of it, but the rosemary flavor never came through enough for me. That’s what made me want to create my own version. This Rosemary Honey Oat Milk Latte balances it perfectly—subtle yet noticeable, especially when paired with agave or honey. It’s smooth, a little herby, a little sweet, and exactly the kind of autumn drink I love making at home.
Why You’ll Love This Recipe
Cozy and Comforting: This warm latte is perfect for chilly mornings or as an afternoon pick-me-up.
Unique Flavor Twist: Rosemary adds a gentle, aromatic depth that complements the sweetness beautifully.
Naturally plant-based: Use agave instead of honey for a fully vegan version.
Simple Yet Sophisticated: Just a few steps for a drink that feels straight from a café.

Ingredient Highlight: Rosemary
Known for its earthy, slightly piney flavor, rosemary adds depth to drinks and dishes without overpowering. Beyond taste, it’s naturally aromatic, releasing essential oils that give both a cozy scent and a fresh herbal lift. Fresh rosemary is key here—dried just doesn’t infuse the same way—so those sprigs bring the full flavor and fragrance that makes this latte special.

Madly Delicious Must-Know Tips and Questions
- Infuse the syrup longer: For a stronger rosemary punch, let the sprigs steep an extra 5 minutes.
- Make it iced: Pour over ice for a refreshing summer latte.
- Go frothy: A frother or immersion blender makes the oat milk silky and café-style.
Can I use a different milk?
Yes! Almond, soy, or cashew milk all work—just stick with unsweetened for best flavor balance.
How long will the syrup last?
Store in an airtight jar in the fridge for up to 2 weeks.
Can I substitute the rosemary?
Yes! If you don’t have rosemary, thyme makes a nice earthy swap, or you could even try lavender for a floral twist. Each herb brings its own character while still keeping the latte cozy and balanced.
Let’s Dish About Latte: Did You Know?
The word latte literally means “milk” in Italian! What we commonly call a latte is actually short for caffè latte, which just means “coffee with milk.” In Italy, if you ask for a “latte,” you’ll probably just get a glass of milk. Flavored versions, like this rosemary latte, are more of a café invention and show how creative spins keep coffee culture evolving everywhere.
