Equipment

Ingredients
  

  • 2 tbsp coconut oil or vegan ghee
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes (or use 2 cups fresh chopped tomatoes, such as Roma)
  • 1 tbsp fresh ginger, minced
  • 3 garlic cloves, minced
  • ½ medium white or yellow onion, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • ½ tsp tumeric
  • ½ tsp chili powder
  • ¾ tsp salt, adjust to taste
  • ¼-1 tsp cayenne or Kashmiri chili powder (optional, to taste)
  • 3 tbsp mango chutney (store-bought or homemade)
  • ¼ water (add more if using fresh tomatoes)

Optional Garnish

  • 1 lemon, cut in wedges
  • Cilantro, chopped

Instructions
 

  • Sauté the aromatics: Heat 2 tbsp coconut oil in a large skillet over medium heat. Add chopped onion, and sauté for 3-4 minutes until softened. Stir in minced ginger and garlic and cook for another minute until fragrant.
  • Toast the spices: Add 1 tsp cumin, 1 tsp coriander, 1 tsp garam masala, ½ tsp turmeric, ½ tsp chili powder, ¼-1 tsp cayenne (if using), and ¾ tsp salt. Stir well to coat the aromatics and toast the spices for 30 seconds to release their flavor.
  • Add the tomatoes: Pour in the 1 can diced tomatoes (or fresh tomatoes, if using) and stir to combine. If using fresh tomatoes, add ⅓ cup water to ensure the mixture doesn’t dry out. Simmer for 5 minutes, allowing the flavors to meld.
  • Add the chickpeas: Stir in the chickpeas and simmer for 5–7 minutes, stirring occasionally. Adjust salt and seasonings to taste.
  • Stir in the mango chutney: Stir in 3 tbsp mango chutney and let the curry simmer for another 2 minutes. Taste and adjust seasoning if needed.
  • Serve and garnish: Transfer to a serving dish and garnish with a squeeze of lemon and chopped cilantro. Serve warm with rice, naan, or enjoy as is.

Notes

Heat Adjustment
Adjust the cayenne and chili powder to your desired spice level.
Storage
Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop, adding a splash of water if needed.
