Middle Eastern–Inspired Roasted Carrots with Yogurt and Almonds features tender roasted carrots tossed in warm spices, served over a yogurt sauce, and topped with toasted almonds and fresh herbs.
1lbcarrots with tops (such as le petites from Trader Joe’s)
1tbspolive oil
1½tspbaharat spice blend (such as Afia)
Salt, to taste
Yogurt Sauce
¾cupplain, unsweetened yogurt
½tspbaharat spice blend
Squeeze of fresh lemon juice
Pinch of salt, to taste
Toppings
2tbspsliced almonds, lightly toasted
1tbspparsley, finely chopped
Drizzle of olive oil
Flaked sea salt, to finish

Instructions
Preheat and Prep: Preheat oven to 425°F (220°C). Trim any excess stems from the 1 lb carrots if needed and wash well, keeping the tops for presentation.
Season the Carrots: On a baking sheet, toss the carrots with 1 tbsp olive oil, 1½ tsp baharat spice blend, and salt to taste. Spread into an even layer.
Roast: Roast for 20–25 minutes, turning halfway through, until the carrots are tender and lightly caramelized at the edges.
Make the Yogurt: Meanwhile, in a small bowl, mix ¾ cup yogurt, ½ tsp baharat spice blend, a squeeze of lemon juice, and a pinch of salt. Taste and adjust as needed.
Assemble: Spread the yogurt onto a serving platter, then place the warm roasted carrots over the top.
Finish and Serve: Top with 2 tbsp toasted sliced almonds, 1 tbsp chopped parsley, a drizzle of olive oil, and flaked sea salt (optional). Serve immediately.

CarrotsThese are not baby carrots or full-sized carrots — they’re the smaller, tender bunch carrots with tops (like the le petites at Trader Joe’s). If using full-sized carrots, cut them in half lengthwise and then in half crosswise so they roast evenly.Baharat SpiceBaharat is a Middle Eastern spice blend typically made with warm spices like paprika, cumin, coriander, cinnamon, and black pepper. If you don’t have it, you can substitute with a mix of paprika, cumin, and a pinch of cinnamon or allspice to get a similar warm, spiced flavor.
