Key Lime Curd Yogurt Parfait

These Key Lime Curd Yogurt Parfaits are a bright, citrusy treat layered with tangy key lime curd, creamy yogurt, juicy mango, crushed graham crackers, and a sprinkle of coconut. It’s a refreshing breakfast, snack, or light dessert with a sweet-tart balance and no eggs in the curd. Naturally vegetarian and easily made vegan!

Equipment

Ingredients
  

Key Lime Curd (you will have extra)

  • ½ cup key lime juice (like Nellie & Joe’s OR use fresh key limes if available)
  • ½ cup granulated sugar
  • 1 tbsp cornstarch (add 1 tsp more if you prefer a thicker curd)
  • cup milk of choice or water
  • 2 tbsp salted butter or plant-based butter

Yogurt Parfait

  • 2 cups plain, unsweetened plant-based yogurt (not Greek-style), divided
  • 1-2 sheets (~ ¼ cup) vegan graham cracker, or similar
  • 1 mango peeled and diced into bite-size pieces
  • ¼ cup granola of choice
  • 2 tsp finely shredded coconut
  • Lime zest for garnish

Instructions
 

  • Make the Key Lime Curd: In a small pot, add ½ cup key lime juice and ½ cup granulated sugar. Cook over medium heat, stirring occasionally, until the sugar is fully dissolved.
    In a separate small bowl, whisk together ⅓ cup milk of choice (or water) and 1 tbsp cornstarch until completely smooth and no lumps remain. Slowly pour the cornstarch mixture into the pot, whisking constantly. Continue to cook over medium heat, whisking continuously, until the curd thickens and coats the back of a spoon.
  • Add the Butter: Remove from heat and stir in 2 tbsp butter until melted and fully incorporated. Let cool slightly before using (it will thicken further as it cools). You will have extra—save for other desserts!
    Tip: If using right away, you can pop in the freezer to chill for 15 minutes while you prepare the rest of the ingredients for the parfait. Also great to make in advance and keep on hand!
  • Assemble the Parfaits: In each 12-ounce glass or parfait cup, sprinkle a bit of crushed graham cracker at the bottom. Add ½ cup yogurt, followed by a spoonful of key lime curd (~ 2 tbsp), a layer of granola (~2 tbsp), and diced mango.
    Repeat the layers with another ½ cup yogurt, a final sprinkle of graham cracker crumbs, more curd, more mango, and finish with finely flaked coconut.
    Top with lime zest, if desired.

Notes

Key Lme Options:
If you don’t have access to bottled key lime juice or fresh key limes, you can absolutely use regular limes or even lemons instead. The flavor will still be bright and citrusy—just a little different from traditional key lime.
Make Ahead
The curd can be made in advance and stored in an airtight container in the fridge for up to 1 week.
Texture Tip
For a softer topping, use finely grated coconut rather than shredded, or pulse shredded coconut in a food processor to create a finer consistency.
Other Uses for the Curd
You’ll likely have leftover curd—lucky you! Spoon it over pancakes or waffles, dollop onto scones, layer it into parfaits or trifles, or serve with fresh fruit or beignets.
