A delicious twist on a classic, this Halloumi Gyro features golden halloumi, homemade oregano fries, fresh tomatoes, and pesto, all wrapped in your choice of pita or naan. Perfectly savory and satisfying, this vegetarian gyro is packed with flavor!
1thin round of onion, cut into half moons (yellow or white onion)
1medium golden potato, cut into fries
Salt and pepper to taste
3tbspolive oil (plus 1/2 tsp for cooking halloumi)
1tsporegano (Greek oregano if available)

Instructions
Prepare the Fries: Preheat your oven to 425°F (220°C).
In a small bowl, mix 3 tbsp of olive oil with 1 tsp of oregano.
Toss the cut potato fries with 2/3 of the oil mixture, and season with salt and pepper.
Spread the fries out on a sheet pan. Bake in the preheated oven for 22-28 minutes, mixing halfway through, until crispy and golden.
Prepare the Halloumi: While the fries are baking, heat 1/2 tsp of olive oil in a skillet over medium heat (start this about 5 minutes before the fries are done).
Add the halloumi slices and cook for 2-3 minutes per side, until golden brown. Remove from heat.
Toast the Flatbread: Toast the flatbread in a toaster oven or pop it in the oven for a few minutes until warmed and slightly crispy on the edges.
Assemble the Gyros: Spread 1 tbsp of pesto on each piece of flatbread or pita.
Top each with 3 slices of halloumi, tomatoes, and onions.
Drizzle with the remaining oil and oregano mixture.
Add a generous portion of fries on top (you may have extra to snack on).
Serve: Serve immediately and enjoy!
