Asian-Spiced Red Lentil Fritters with Sesame Crunch

These Asian-Spiced Red Lentil Fritters are crispy, flavorful, and packed with bold spices. Made with red lentils, Thai red curry paste, and herbs, they’re perfect as a snack, side dish, or protein-packed main!
½-¾cupbasil or cilantro (or a mix), lightly packed
½small white or yellow onion, cut into large chunks
2-3green onions, roughly chopped
¼cupsesame seeds (mixed black and white)
½tspsalt, adjust as desired
¼tspblack pepper, adjust as desired
Coconut for pan frying
Hummus or preferred dipping sauce (optional)

Instructions
Soak the Lentils: Place 1 cup of dry red lentils in a bowl, cover them with cold water, and soak for 4 hours. Drain the lentils, rinse then set aside.
Blend the Lentil Mixture: In a food processor, combine the soaked lentils, sriracha, Thai red curry paste (or tomato paste), basil or cilantro, onion chunks, andgreen onions. Pulse until the mixture is coarse but well combined, scraping down the sides as needed. It should not be a smooth paste—some texture is key!
Form the Fritters: Spread ¼ cup sesame seeds onto a plate. Using a medium cookie scoop, scoop out an oversized scoop of the lentil mixture. Press the bottom into the sesame seedsandgently flatten into a patty shape. Repeat with remaining mixture.
Fry the Fritters: Heat coconut oil in a skillet over medium heat. Once hot, add the fritters in batches, being careful not to overcrowd the pan. Fry for 3–4 minutes per side, until golden brown and crispy. Add more oil as needed between batches.
Serve & Enjoy: Transfer the fritters to a paper towel-lined plate to drain excess oil. Serve immediately with hummus or your favorite dipping sauce!
