  • 4 red or Bosc pears, peeled and cut into wedges (8–10 slices per pear)
  • Oil spray (for the baking sheet)
  • 1 tsp fresh rosemary, chopped
  • 1 tbsp vegan butter (add another ½ tbsp if needed)
  • 1 tsp pure maple syrup
  • Salt and pepper, to taste

Instructions
 

  • Roast the pears: Preheat your oven to 375°F (190°C). Lightly spray a baking sheet with oil. Arrange the pear wedges in a single layer on the prepared baking sheet. Roast for 20–25 minutes, flipping halfway through, until tender and just starting to caramelize at the edges. Remove the pears from the oven and set aside.
  • Prepare the rosemary butter: In a large skillet, melt 1 tbsp butter over medium heat. Stir in the chopped rosemary and cook for 30-60 seconds, until fragrant. Add 1 tsp pure maple syrup, stirring to combine.
  • Sauté the pears: Add the roasted pears to the skillet and toss gently to coat in the rosemary-maple butter. Sprinkle with salt and pepper, adjusting to taste. Sauté the pears for 3–4 minutes, turning occasionally, until warmed through and lightly golden. Add another ½ tbsp butter if the skillet becomes too dry.
  • Serve: Transfer the pears to a serving dish and enjoy warm as a side dish. Garnish with a rosemary sprig if desired! These pears pair wonderfully with holiday meals!

    Would give six stars if I could! I made these pears as a side dish for our Christmas Eve dinner and they turned out absolutely spectacular! I used red Anjou pears and plenty of fresh rosemary. It complemented a mushroom Wellington really nicely, and would do very well next to any kind of meat too.
