Peach Salad with Pistachio and Mint: A 5-Ingredient Summer Gem
My Peach Salad with Pistachio and Mint came together last summer when I couldn’t stop using mint. I had a bunch of ripe peaches on hand, and for some reason, the combo of peaches, pistachios, and mint just sounded right—and it was! This is one of those no-fuss, five-ingredient recipes that ends up looking gorgeous and feeling kind of fancy without any effort. The lemon honey drizzle is barely a dressing, but it gives the salad a little pop and helps soften the peaches just enough. It’s bright, fresh, and perfect for summer.
