A few years back, we had just finished the Kalalau Trail—11 miles in, 11 miles out, and four days of camping on the coast of Kauai. Before the hike, we had found this resort nearby, so we stopped in—and they had this pineapple mojito that was so good, I couldn’t stop thinking about it. Minty, super fresh, and full of pineapple flavor and it doesn’t hurt that I think pineapple is my favorite fruit! This Pineapple Mojito Mocktail is my little homage. No booze, just those same bright, tropical vibes.

Pineapple Mojito Mocktail
Equipment
- Muddler or wooden spoon
Ingredients
- ½ oz lime juice (about 1 lime or 1 tablespoon)
- ¾ oz agave (1 ½ tablespoons)
- 4 mint leaves

- Soda water
Instructions
- Prepare the Base: In a glass, combine 1 tbsp of lime juice (1/2 ounce) with 1 ½ tbsp of agave syrup (3/4 ounce).
