This recipe was really inspired by the time of year — finally getting out of winter and starting to turn the corner into spring. Citrus season is here, and an orange poppy Seed muffin just sounded like the perfect bake. I originally tested these with blood oranges, but once baked the color turns a grayish-purple a really that was a bit off-putting. Sticking with navel or Cara Cara oranges is definitely the way to go. The flavor is mellow, bright, and such a nice pairing with the poppy seeds. Instructions
- Preheat and Prep: Preheat oven to 375°F (190°C). Line a 12 full-size muffin tin with liners or lightly grease.
- Mix the Dry Ingredients: In a medium bowl, whisk together 1¾ cups all-purpose flour + 2 tbsp, ⅔ cup granulated sugar, 2 tsp baking powder, ½ tsp baking soda, ½ tsp salt, and 2 tbsp poppy seeds. Stir in the zest of 2 oranges.
- Mix the Wet Ingredients: In a small bowl, whisk together ½ cup fresh-squeezed orange juice, ½ cup neutral oil, ¼ cup plain, unsweetened plant-based milk, 1 tsp vanilla extract, and ½ tsp almond extract.
