The word “gyro” translates to “turn” or “revolution” in Greek, referring to the method of cooking meat on a vertical rotisserie. Originally featuring lamb or chicken, the gyro has evolved into a globally loved dish. This vegetarian version with halloumi offers a delicious spin on the traditional Greek favorite, providing a unique texture and flavor to this street food staple. 🌍🇬🇷

- 9 oz halloumi, cut into 6 slices

- 1 roma tomato, halved and cut into half moons

- 1 medium golden potato, cut into fries
- Salt and pepper to taste

- Toast the Flatbread: Toast the flatbread in a toaster oven or pop it in the oven for a few minutes until warmed and slightly crispy on the edges.
- Assemble the Gyros: Spread 1 tbsp of pesto on each piece of flatbread or pita.
- Top each with 3 slices of halloumi, tomatoes, and onions.
- Drizzle with the remaining oil and oregano mixture.
- Add a generous portion of fries on top (you may have extra to snack on).
