Ingredients
  

  • Plant-based butter or oil for the pan

Dry Ingredients

  • ¼ tsp salt

Wet Ingredients

  • 1⅓ cup vegan eggnog (like an OatNog or AlmondNog)
  • 3 tbsp melted butter or oil (like avocado or vegetable)
  • 1 tsp vanilla extract
  • ½ tsp apple cider vinegar

Instructions
 

  • Mix the Dry Ingredients: In a medium mixing bowl, whisk together the 1 cup flour, 2 tbsp sugar, 2 tsp baking powder, ½ tsp nutmeg, ½ tsp cinnamon, and ¼ tsp salt until evenly combined.
  • Combine the Wet Ingredients: In a separate bowl, whisk together the 1⅓ cup eggnog, 3 tbsp melted butter or oil, 1 tsp vanilla extract, ½ tsp apple cider vinegar until smooth.
  • Make the Batter: Gradually pour the wet ingredients into the dry ingredients, gently stirring until just combined. Be careful not to overmix. The batter should be thick.
  • Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or neutral oil, ensuring an even coating.
  • Cook the Pancakes: Scoop 2 tablespoons (you can use a small cookie scoop) of batter onto the skillet for each pancake. Cook 2–3 minutes until bubbles form and the edges are set, then flip and cook 1–2 minutes until golden. Repeat with the remaining batter, greasing the pan as needed.
    Note: I find that the first batch takes the longest and then the above timing fits.
