Ingredients
  

  • 1 cup dry red lentils
  • 2 tbsp sriracha
  • 2 tbsp Thai red curry paste (or tomato paste)
  • ½-¾ cup basil or cilantro (or a mix), lightly packed
  • ½ small white or yellow onion, cut into large chunks
  • 2-3 green onions, roughly chopped
  • ¼ cup sesame seeds (mixed black and white)
  • ½ tsp salt, adjust as desired
  • ¼ tsp black pepper, adjust as desired
  • Coconut for pan frying
  • Hummus or preferred dipping sauce (optional)

Instructions
 

  • Soak the Lentils: Place 1 cup of dry red lentils in a bowl, cover them with cold water, and soak for 4 hours. Drain the lentils, rinse then set aside.
  • Blend the Lentil Mixture: In a food processor, combine the soaked lentils, sriracha, Thai red curry paste (or tomato paste), basil or cilantro, onion chunks, and green onions. Pulse until the mixture is coarse but well combined, scraping down the sides as needed. It should not be a smooth paste—some texture is key!
  • Form the Fritters: Spread ¼ cup sesame seeds onto a plate. Using a medium cookie scoop, scoop out an oversized scoop of the lentil mixture. Press the bottom into the sesame seeds and gently flatten into a patty shape. Repeat with remaining mixture.
  • Fry the Fritters: Heat coconut oil in a skillet over medium heat. Once hot, add the fritters in batches, being careful not to overcrowd the pan. Fry for 3–4 minutes per side, until golden brown and crispy. Add more oil as needed between batches.
  • Serve & Enjoy: Transfer the fritters to a paper towel-lined plate to drain excess oil. Serve immediately with hummus or your favorite dipping sauce!
